Posh Portobello

For the past year or so, I’ve had a pretty serious love affair with Rao's Homemade Arrabiatta and have enjoyed this delicious sauce at least once a week with every shape of pasta possible. Recently though, I discovered a new way to incorporate this even more frequently into my carbo-loaded diet by making a carb-less alternative to pizza. I’ll admit that I actually hate cooked mushrooms and could write and entire post about the unpleasing texture they offer, but when I tried Portobello Pizza I fell absolutely in love.


This recipe is super easy, and for a shopgirl who gets home from work needing to eat in 20 minutes or less it’s a life saver. Start by setting your oven to 400 degrees, lining a cookie sheet with tin foil, and pouring yourself a glass of Skinny Girl Margarita.


Next, pop the stem of the Portobello mushroom off and then give the cap a good cleaning and scrubbing to get off any dirty. Now cut a few super shallow lines on the top, to help water escape while it cooks, and place it upside down on the cookie sheet.


Now is the fun part- filling the inside of the mushroom as if you are making your own pizza. I like to start by putting a heaping teaspoon of Rao’s Homemade Arrabiat sauce in, then layering some spinach leaves inside. I’ve also used peppers, olives, other mushrooms- whatever pizza toppings you usually get. Simply sprinkle your favorite shredded cheese on top, I’m using mozzarella, and then pop it in the oven for around 12 to 15 minutes depending on how many ingredients you’ve put in.



While the mushroom cooks you can put a bit of water on to boil and make some pasta to serve with it, and feel free to use whatever pasta you like. The best part about this recipe is that you can really make it to taste since it’s so simple, and if you’re cooking for a large group everyone can pitch in and make their own “pizza” (I like this method as you get the credit, while they do the work.) Voila! Super simple.

Transition into Kensie

As some of you may know, I was just lucky enough to head on a cruise to the Bahamas with my honey last weekend. Let me tell you though- while the cruise was warm and wonderful it’s making the dreary spring weather back home nearly unbearable.
